Ok, now when I started watching what I eat, I new that things would start to change. I have even talked about it in a few of my blogs, but well, I forgot that it would require buying new clothes. I HATE to go clothes shopping. Just not something I enjoy...never have and I don't think I ever will. But I guess it has now become a necessity. My jeans that I LOVE are now way to big for me and wearing a belt is not helping when they gap all over my waist. We did measurements this past week and I loved this part. This is where I saw what was really happening. I have lost 4 1/2 inches on my waist, 3 inches on my hips and 2 1/2 inches on my thighs. Did I say that I loved this part? It made everything so far, well worth while. Hearing how many inches I had lost. It kinda remotivated me...then when I weighed in last night...I have lost a total of 18 lbs so far. I am hoping that by the end of the month I can hit the 25 lb mark. That is my goal. A few of my co-workers have started to notice the difference and said it is showing in my face especially. :) I have found that I am enjoying taking a recipe and changing things to make it work in my new eating habits. I have found this fantastic recipe for Thin and Crispy BBQ Chicken Pizza. WOW, is it fantastic. I started with a recipe from the Biggest Loser Cook book and changed it around a bit to work in my lifestyle and with foods I can get at my local grocery store. Remember, small town. I love this recipe and eat it alot. You start with a 7 inch tortilla shell, toast it in the over on 375 degrees. Make sure you flip it and don't let it burn. Then take it out and spread 2T of BBQ Sause, finely slice onion(to your taste) and a 1/2 chicken breast grilled and chopped up(sometimes I use more depending on the size of the chicken breast). Then, I sprinkle 1/4 cup of skim milk mozzerella cheese shredded or provolone cheese shredded. ( I use a mix of both). Cook in Oven on 375 degrees until cheese is melted. Then when done cooking, sprinkle on chopped up Roma tomatoes. WOW. This is SO Yummy!!!! Serve it with 1T of BBQ sause on the side or drizzled of the top of whole pizza. This is my go to meal because I grill the chicken all at one time and then put them in the fridge to use as needed. Everything else can be quickly pulled together. Way to go, Meg. I know it sure is hard to lose weight, but keep up the progress.
